    Mix chicken thigh or breast (Cut into Stir Fry sized pieces) , corn starch , baking soda , sugar , kosher salt , Shaoxing wine , light soy sauce , and egg white .

    Let stand for at least 15 mins.

    Large dice onion , green bell pepper , and red bell pepper .

    Large dice pineapple and place in a separate bowl. Save liquid for sauce.

    Crush garlic and ginger in a mortar and pestle .

    Whisk together the pineapple juice from the pineapple, ketchup , white vinegar , sugar , soy sauce , a splash of Shaoxing wine, and corn starch .

    Bring water to a simmer in a wok .

    Once simmering, add the chicken one piece at a time.

    Cook for 30-60 seconds.

    Remove to a sheet tray in a single layer to dry.

    Clean the wok.

    Dry the wok and place it back on the heat.

    Add a tiny amount of oil and rub into wok.

    Once smoking, the wok is preheated.

    Add a couple of tablespoons of oil and swirl to coat wok.

    Add the onion, green bell pepper, and red bell pepper.

    Cook until tender crisp.

    Push to one side, add a little more oil and add the aromatics.

    Mix and let stir fry for about 30 seconds.

    Add chicken, pineapple, and the sauce.
