Sweet & Sour Chicken

2Let stand for at least 15 mins.

3Large dice onion , green bell pepper , and red bell pepper .onion: 1, green bell pepper: 1, red bell pepper: 1

4Large dice pineapple and place in a separate bowl. Save liquid for sauce.pineapple: 10 oz can

5Crush garlic and ginger in a mortar and pestle .garlic: 4 cloves, ginger: 1/2 finger

6Whisk together the pineapple juice from the pineapple, ketchup , white vinegar , sugar , soy sauce , a splash of Shaoxing wine, and corn starch .ketchup: 3 tbls, white vinegar: 2 tbls, sugar: 1 tbls plus 1/2%tsp, soy sauce: 1 tsp, corn starch: 2 tsp

7Bring water to a simmer in a wok .water: 4 c

8Once simmering, add the chicken one piece at a time.

9Cook for 30-60 seconds.

10Remove to a sheet tray in a single layer to dry.

11Clean the wok.
-
12Dry the wok and place it back on the heat.

13Add a tiny amount of oil and rub into wok.oil

14Once smoking, the wok is preheated.

15Add a couple of tablespoons of oil and swirl to coat wok.

16Add the onion, green bell pepper, and red bell pepper.

17Cook until tender crisp.

18Push to one side, add a little more oil and add the aromatics.

19Mix and let stir fry for about 30 seconds.

20Add chicken, pineapple, and the sauce.

21Add cashews (optional).cashews

22Let cook until desired thickness is reached.
